SUMMERFIELD
Only made when the cows are at pasture during the summer months, this cheese is in extremely short supply. Made to a Swiss Alpine cheese recipe, it has that sweet, supple nuttiness associated with the best Gruyère and Comte. Made with organic milk from 46 Shorthorn Dairy Cows at Botton Village Camphill Community (nr. Whitby) that provides adults with learning disabilities the opportunity to get involved farming and making the cheese.
YOREDALE
An old-fashioned Wensledyale recipe, aged for 6 weeks. Raw milk from Lawkland is used in this batch from low yielding cows grazed out in a New Zealand style system. Not quite as crumbly as its modern relations, with a fresh, sharp yet light flavour and supple creamy texture.
YOREDALE BLUE
Made by hand, Yoredale Blue is made to a traditional cloth-bound Wensleydale recipe. The cheese is pierced and aged for a further three months. The piercing allows the blue veins to form and break down the tart-freshness of the traditional Wensleydale, giving it a smooth and soft texture with mellow spicy-blue flavour.
