Little Biscuits for Well Being

Ingredients

250g Spelt Flour (wholemeal or white)
1 teaspoon Baking Powder
1 egg
100g good quality honey or unrefined brown sugar
125g butter
50g ground almonds

Spices - 1 teaspoon each of:
ground cinnamon
ground ginger
ground cloves

Variation:
Substitute cloves for organic grated lemon zest - delicious!

Experiment with spices amounts as desired.

These delicious little biscuits (and beautiful handwritten recipe) were shared with us by Gwenda, our much loved customer. Gwenda became friends with one of our volunteers Evie, who shared the recipe with her last year. It is inspired by the writings of Hildegard Von Bingen, the visionary abbess, mystic, polymath, composer, natural historian....and cook. She lived for 81 years back in the 12th Century - so perhaps her wellness advice is something to take heed of!

1 Put the flour and baking powder into a bowl with slightly softened butter rubbed through 2 In another bowl add spices and honey/sugar with egg and beat together 3 Mix with larger bowl of flour. Add almonds and knead gently until smooth. 4 Cover the bowl and leave to rest in fridge for an hour 5 Later roll out - I do half at a time - to cut into little rounds. 6 Place on oven tray lined with parchment paper (optional - they don't really stick) 7 Place in pre-heated oven at 350f/180c/170c (fan) 8 Bake on middle shelf for 15mins. 9 Optional - sprinkle with icing sugar for festive touch.
