This loaf won Lovingly Artisan the Bakery Innovation Award at the Baking Industry Awards in 2019. It is an extremely flavoursome, tangy sourdough with a chewy crust. The flavour is enhanced by kombucha, which is tea that has undergone a long, slow wild-yeast fermentation. Emmer is an ancient grain, even older than spelt, and has many beneficial properties, making this a loaf that does you good while it delights.
