
Grown by our local organic producers, Wyreside Mushrooms. This wonderfully spiky looking mushroom has become well known for improving cognitive function and reducing inflammation.
The flavour is brought out best when lightly browned with olive oil on a medium heat. Cut the mushroom into bite-sized chunks and chop a clove of garlic. Add the garlic and mushroom to a medium heated pan, turning over frequently. After a minute, add spinach, cooking for another couple of minutes. The stir fry makes a delicious side dish!
